Ikkas Dry red chilli chicken

 Dry red chilli chicken – another successful experiment with chicken. As its name says it is a variety chicken preparation with dry red chillies. It can be served as a starter or snack and also goes well with rice.

Ingredients

  • Chicken (Boneless) – ½ kg
  • Dry red chillies – 12 Nos
  • Gram flour / Corn flour– 6 Table spoon
  • Ginger – 2 Inch piece
  • Garlic – 10 Cloves
  • Shallot  – 15 Nos
  • Curry leaves  – 2 Sprigs
  • Lemon juice  – 1 Table spoon
  • Chilli powder – 1¼ Table spoon
  • Turmeric powder – 1 Pinch
  • Cooking oil – to deep fry
  • Salt   – To taste
Method
  1. Wash and clean the chicken. Cut it (length wise) into small pieces.
  2. Grind ginger (1 inch piece), garlic (5 cloves), curry leaves (1 sprig), lemon juice, salt , chilli powder (1 table spoon) and turmeric powder into a paste.
  3. Marinate chicken pieces the ground paste for minimum 30 minutes.
  4. Slice remaining garlic, ginger and shallots.
  5. Add gram/corn flour into the marinated chicken pieces and mix it well by adding 4 table spoon of water.
  6. Heat cooking oil in a pan and deep fry the chicken pieces (till it turns brown). Keep it aside.
  7. Heat 2 table spoon of oil in a pan. Put broken dry red chillies (reduce the flame) and stir till it turns dark brown. Put garlic, ginger, shallots, curry leaves and salt into it and saute till it turns golden brown.
  8. Put ¼ table spoon of chilli powder and mix it well. Now, add the fried chicken into it and combine well.
  9. Remove from the flame and transfer to the serving dish.

IKKAS MALABAR CHILLI KAPPA / TAPIOCA










Ingredients


1.Tapioca  (2large piece)

2.Salt (to taste)

3.Turmeric (for color)

4.Water (as required)

5.coconut oil


Green chilli dip / Mulaku chammanthi


1.Green chilli (10 nos)

2.Onion (chopped -1/2cup)

3.Salt (as required)

4.vinager (2 to 3 spoon)


Method

TO prepare boiled tapioca

.Cut tapioca into medium pieces and  wash clearly
.Take large pan,bring water to a boil, add tapioca , little salt, little turmeric and cook for about 15 to20 minutes
After boiled take into a bowl

Green chilli dip

.Crush green chilli and onion
. Transfer this to a bowl,add vinager , salt and mix all together.chilli dip is ready

Add this green chilli dip and coconut oil at last into
that boiled tapioca .Mix it well all.

IKKAS DRINK "IKKAS SODA"











 

 Ingredients



.Soda
.Lemon

.Vinager

.Salt

.chilli piece

.Ginger

.Ice cube


Method

Take a empty glass and add little salt, vinager(4spoon),  ginger , chill(small cut piece) and add  lemon. Mix soda to that glass and mix well with spoon and put some  ice cubes to that glass.
Now the horror soda is ready. enjoy the ikkas taste.

KADAR IKKAS SPECIAL " USTAD"

USTAD



Ingredients
.Takes 2 eggs

.Bread 2 piece

.chilli powder

.Butter

.Tomato (small pieces)

.Pepper powder

. Onion



Method

Heat oil in pan
 

Mix this 2 eggs with some chilli powder and roast egg in this pan. Roast onion in oil. Cut the bread into 4 small pieces. Take that roasted egg  and spread the butter along the roasted egg and fill bread into roasted egg  and spray pepper over all and roll the roasted egg. now serve the ustad.


 







Malabar Cheera Thoran









Ingredients
  • 1 cup chopped spinach

    2 Tbsp oil

    1/2 Tbsp mustard seeds

    2 Tbsp chopped red chillies

    7 to 8 curry leaves

    2 Tbsp chopped green chillies

    1/2 Tbsp turmeric powder

    1 Tbsp chopped garlic

    2 Tbsp grated coconut

    Salt to taste
Method
Heat oil in a pan.

Add mustard, red chillies and curry leaves.

Now add green chillies, turmeric powder, chopped garlic and spinach.

Let the spinach steam, then add grated coconut.

Season and cook for a few minutes.

Serve garnished with grated coconut
